Miraflores according to legend, is a town known for the most beautiful women and toughest cowboys. In this story, we will be focusing on neither, instead talking about the unsung heroes–the organic farmers. Miraflores farmers have a rich history of specializing in growing the freshest organic tomatoes, cauliflower, sage, cucumbers, carrots, and squash blossoms.
One fruit stands above all else in Miraflores, Pitayas also known as “Dragon Fruit”. Pitaya is a very versatile and exotic fruit that can be made into drinks, gelato, salads, or even eaten fresh. The pigment from the Pitaya is also used for fabric dyes and to paint murals. Miraflores celebrates the Pitayas every Summer in July at a festival called, "The Feria de la Pitaya" now in its 30th year.
Dragon Fruit is a fruit that is high in fiber and low in calories. Some people say it tastes like a cross between Pears and Kiwi. Because of its high fiber and magnesium content, it’s considered a nutrient-dense food.

- Betalains help protect the “bad LDL Cholesterol from becoming oxidized in your system
- Hydroxycinnamates that have exhibited anti-cancer properties
- Flavonoids help improve brain health and reduce the risk of heart disease
