On September 16th, Mexico celebrates its independence from Spain. In 1810 Miguel Hidalgo y Costilla, a catholic priest, initiated the call for Independence. It marked the beginning of the struggle for Mexico's Independence. Father Hidalgo's fate did not end well; he paid the ultimate price by sacrificing his life and was executed. The struggle was further championed by another priest, José María Morelos, who continued the fight. But he also met a similar fate. Eventually, a Spanish military officer turned insurgent, Agustín de Iturbide, played a significant role in Mexico's journey towards independence. Iturbide succeeded in securing Mexico's independence in 1821.

Iturbide's plan, known as the Plan of Iguala, aimed to provide Mexico with three guarantees: the end of Spanish rule, the establishment of a constitutional monarchy, and the unification of Mexicans of all classes. To this day, Mexico officially acknowledges the beginning cry of independence of Father Hidalgo, who sowed the seeds of freedom and paid the ultimate price.

The celebrations for Mexico's Independence Day commence on the evening of September 15th. Crowds gather in the main square downtown, where they enjoy live mariachi music and celebrate with dancing and drinks until the "Grito" (the cry of independence) and fireworks at 11 p.m. The next day September 16th there is a special parade downtown, the highlight of Independence Day celebrations. The famed national dish–"Chiles en Nogada” will be on the menu all over town. A patriotic dish that consists of Poblano Pepper stuffed with a mixture of pork and covered in a white walnut cream sauce. The dish is garnished with parsley and pomegranate seeds, giving it the colors of the Mexican flag: red, white, and green. It’s both exciting and delicious and makes for a great way to celebrate Mexico's Independence.
